If you’re navigating the world of food allergies with your little one, you’re not alone! My almost 2-year-old has a dairy allergy, so I’m whipping up another batch of these shortbread cookies. They’re perfect for the “dairy ladder” process and allow me to control exactly how much dairy he’s consuming.

For those wondering, a dairy ladder is a gradual reintroduction of dairy into the diet, starting with tiny amounts and increasing over time to help build tolerance. This recipe uses regular butter, making it a great choice for the first steps of the ladder. If this batch makes 48 cookies, each cookie will have about 5.3 grams of butter (approximately ⅓ tablespoon).

Ingredients

  • 255 grams (2 sticks) regular butter

  • ½ cup (100 grams) granulated sugar

  • ¼ cup (55 grams) light brown sugar

  • 1 teaspoon vanilla extract

  • 2½ cups (325 grams) all-purpose flour

  • 6 ounces (170 grams) mini dairy-free chocolate chips

Instructions

  1. Mix it up: In a large bowl, beat the butter, granulated sugar, light brown sugar, and vanilla extract until the mixture is super light and fluffy.

  2. Add the dry ingredients: Scrape down the sides of the bowl, then gradually add the flour. Once fully incorporated, mix in the dairy-free chocolate chips. If needed, knead the dough gently with your hands to ensure everything comes together.

  3. Chill the dough: Roll out the dough between two sheets of parchment paper and chill it in the fridge until firm, about 1 hour.

  4. Cut your shapes: Once firm, use cookie cutters to cut out your favorite shapes and place them on parchment-lined baking sheets.

  5. Bake to perfection: Preheat your oven to 350°F (175°C) and bake for 10–13 minutes, or until the edges are just golden.

  6. Cool and enjoy: Let the cookies cool on a wire rack before serving.
