Homemade Tomato Soup with Grilled Cheese

It’s finally fall, and I couldn’t be more excited! 🍁 October has always been my favorite month — not just because of the cooler weather, changing leaves, and cozy vibes, but also because it’s my birthday month! 🎂✨ That makes it extra special for me and gives me every reason to celebrate the season in the best way I know how — with delicious homemade comfort food!

To kick off my favorite month of the year, I just had to start with a bowl of my favorite homemade tomato soup paired with a golden, gooey grilled cheese. There’s nothing better on a crisp autumn evening than dipping a toasty sandwich into a rich, creamy soup. It’s like a warm hug in a bowl!

Homemade Tomato Soup Recipe 🍅

Ingredients:

  • 2 cups grape tomatoes

  • 1 onion, quartered

  • 1 whole head of garlic (top chopped off)

  • 3 mini bell peppers

  • Olive oil

  • Salt & pepper

  • Red chili flakes (optional)

  • 1/4 cup water

  • 1/2 cup heavy cream

  • Fresh basil, roughly chopped

  • Shaved Parmigiano for topping

Instructions:

  1. Roast the Vegetables:

    • Preheat your oven to 400°F.

    • Arrange the grape tomatoes, onion, mini bell peppers, and whole garlic on a baking sheet.

    • Drizzle with olive oil and sprinkle with salt, pepper, and a pinch of red chili flakes if you like a little heat.

    • Roast for about 25 minutes until the tomatoes are bursting and the garlic is soft and caramelized.

  2. Blend:

    • Carefully squeeze the garlic cloves out of their skins and add them to a blender along with the roasted vegetables.

    • Blend until smooth, adding 1/4 cup of water to help it come together.

  3. Simmer:

    • Pour the blended mixture into a large pot over medium heat.

    • Stir in the heavy cream and fresh basil.

    • Let it simmer for 10 minutes, allowing the flavors to meld together.

  4. Serve:

    • Ladle into bowls, top with extra basil and shaved Parmigiano, and enjoy hot alongside a crispy, melty grilled cheese sandwich.
