Tiramisu means “pick me up” in Italian, so what better way to start the day
Tiramisu is my all-time favorite dessert, so when I saw the viral tiramisu chia pudding trend, I knew I had to make my own version. I love chia pudding, and this recipe gives me the best of both worlds—dessert for breakfast but in a super nutritious way!
What makes this even more special is the use of silken tofu, which reminds me of taho, a beloved Filipino breakfast/dessert made with soft tofu, syrup, and sago pearls. It’s nostalgic and comforting while packing in a protein boost. Plus, tiramisu means “pick me up” in Italian, so what better way to start the day?
This creamy, coffee-infused treat is loaded with protein and fiber, making it a satisfying meal that keeps me energized. Each serving packs around 12g of protein (thanks to the silken tofu and chia seeds) and 9g of fiber, which is great for digestion and keeping you full for hours. It’s also the perfect guilt-free way to satisfy dessert cravings any time of the day!
Tiramisu Chia Pudding Recipe
Cream Layer:
200g silken tofu
2-3 tablespoons maple syrup (adjust to taste)
1 teaspoon vanilla extract (or vanilla bean paste)
2 tablespoons chia seeds
Base Layer:
1 cup oatmeal or oat flour (I grind my oatmeal to make oat flour)
1 1/2 tablespoons instant coffee
2 tablespoons oat milk butter (or any butter of your choice)
3 tablespoons water (adjust for consistency)
1 teaspoon vanilla extract
Pinch of salt
Topping:
1 teaspoon cacao powder
Instructions:
1. Make the Cream: Blend silken tofu, maple syrup, and vanilla until smooth and creamy. If you want a decorative topping, set aside 2 tablespoons of the mixture before adding the chia seeds. Then, mix in the chia seeds and let the mixture sit while you prepare the base.
2. Make the Base: Mix oat flour, oat milk butter, vanilla, and salt in a bowl. Separately, dissolve instant coffee in 3 tablespoons of water and mix it into the oat mixture until combined. Add more water if needed for the right consistency.
3. Assemble: Press the oatmeal mixture into the base of a jar or serving glass. Spoon the silken tofu chia cream on top. If you set aside extra cream, layer it on top for a nice finish.
4. Finish and Set: Dust with cacao powder. Cover and refrigerate for at least 4 hours or overnight. Enjoy this delicious, protein-packed treat as breakfast or dessert!
