Spam Fried Rice

One of my favorite comfort foods is Spam Fried Rice! Hammie loves it too!

One of my favorite comfort foods is Spam Fried Rice and I’m so glad Hammie loved it too! While it might not be the healthiest meal, it’s a perfect indulgence every once in a while. I’ve added peas and corn to make it a little healthier, and using low-sodium soy sauce keeps things a bit lighter. For extra flavor, I like to add a pinch of black and white pepper to taste. Here’s how you can make it!

Ingredients You'll Need:

For the Teriyaki Sauce:

  • 2 tbsp low-sodium soy sauce

  • 2 tbsp sake (optional – feel free to omit if you don’t have it)

  • 2 tbsp mirin

  • 1 tbsp sugar

For the Stir Fry:

  • 4 tbsp cooking oil, divided

  • 4 eggs, beaten with a pinch of salt

  • 1 can (12 oz) Spam, cut into ½” cubes

  • 3 cloves garlic, chopped

  • 6 cups day-old, cold jasmine rice

  • 1 cup frozen corn and green peas mix

  • Black and white pepper to taste

  • Sprinkle of furikake (optional)

Instructions:

  1. Prepare the Teriyaki Sauce:
    In a small bowl, combine soy sauce, sake (if using), mirin, and sugar. Stir until the sugar is dissolved, then set aside.

  2. Cook the Eggs:
    Heat 2 tablespoons of cooking oil in a large skillet or wok over medium heat. Pour in the beaten eggs and scramble them until fully cooked. Remove from the pan and set aside.

  3. Cook the Spam:
    Add the remaining 2 tablespoons of oil to the pan. Once hot, toss in the cubed Spam. Stir fry until the Spam is crispy and golden brown on all sides.

  4. Stir Fry the Rice:
    Add the chopped garlic to the pan with the Spam and sauté for about 30 seconds until fragrant. Toss in the cold jasmine rice, breaking it apart and mixing everything together. Stir fry for 5 minutes until the rice is heated through.

  5. Add the Teriyaki Sauce:
    Pour the prepared teriyaki sauce over the rice mixture, stirring well to coat everything evenly.

  6. Add Veggies & Eggs:
    Stir in the frozen corn and peas, cooking until they are warmed through. Add the scrambled eggs back to the pan and gently mix everything. Cook for an additional 2-3 minutes. Add black and white pepper to taste.

  7. Garnish & Serve:
    Optional but highly recommended: top your Spam Fried Rice with sesame seeds and shredded nori for an extra layer of flavor.
