Ingredients:

  • 1 lb Italian sausage

  • 2 tablespoons olive oil

  • 1 medium onion, finely chopped

  • 1 teaspoon dried oregano

  • 4 cups chicken broth

  • 1 (28 oz) can crushed tomatoes

  • 9 oz cheese tortellini (fresh or frozen)

  • 3 cups fresh baby spinach

  • Grated Parmesan cheese, for serving

Instructions:

  1. Brown the Sausage: In a large pot, cook the Italian sausage over medium heat, breaking it apart with a spoon until it's fully browned. Once cooked, remove the sausage from the pot and set it aside on a paper towel-lined plate to drain off any excess fat.

  2. Sauté the Aromatics: In the same pot, add the olive oil and heat it over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent and fragrant, about 3-5 minutes. Stir in the oregano and basil, and season with salt and pepper to taste.

  3. Simmer the Soup: Pour the chicken broth and crushed tomatoes into the pot with the aromatics. Stir well to combine. Bring the mixture to a simmer, then add the cooked Italian sausage back to the pot.

  4. Cook the Tortellini: Add the tortellini to the simmering soup. Cook according to the package instructions, usually about 5-7 minutes for fresh tortellini and a bit longer for frozen.

  5. Add Spinach: Once the tortellini is tender, add the baby spinach to the pot. Cook for an additional 2-3 minutes, or until the spinach has wilted and the soup is heated through.

  6. Serve Warm: Ladle the hot soup into bowls and sprinkle generously with grated Parmesan cheese. Serve immediately and enjoy the burst of flavors and textures.
